Black Eyed Pea Casserole

Ingredients
3 tablespoons olive oil
1 (10 ounce) package Kielbasa Sausage, Chopped Bite Size
1 green bell pepper, chopped
1 jalapeno, seeded and chopped (optional)
1 onion, chopped
1 (15 1/4 ounce) can whole kernel corn, drained
1 (15 1/4 ounce) can Black Eyed Peas with Snaps, drained
1 (15 1/4 ounce) can cream corn
8 ounces sour cream
8 tablespoons cold butter, chopped small pieces
1 (8 1/2 ounce) package of cornbread mix, like Jiffy
Directions
In a hot skillet pour in the olive oil and saute the onions ,bell peppers and jalapenos. When the onions are clear then add the sausage and continue to cook until the sausage is heated through and starting to brown.
Remove from the heat and set aside.
In a large mixing bowl add the whole kernel corn, black eyed peas, and cream corn. Add in the sour cream and butter then mix well.
Add in the cornbread mix and stir until completely mixed.
Salt and Pepper to taste.
Pour into a 9X13 baking dish.
Bake at 375 degrees for 55 to 60 minutes until golden brown on top.
