Asparagus and Berries Flatbread Salad

Ingredients

Serves 1

1 whole grain flatbread

1/2 cup Mozzarella Cheese, grated

2 cups mixed spring greens

2 cups steamed asparagus, chopped

2 cups berries, whole or chopped

1 cup Feta Cheese, crumbled

Directions

Steam 2 cups of Asparagus and set aside to cool.

Place the flatbread on a baking sheet and sprinkle it with the Mozzarella Cheese.

Place the baking sheet in a 425 degree oven for 8 minutes until the cheese is melted and the flatbread is just toasted.

When the flatbread has cooled, place the spring greens on top of the bread.

Place the steamed cooled asparagus on top of the greens.

Next place the berries on top of the asparagus and greens.

Last sprinkle the Feta Cheese over the salad.

Drizzle with Balsamic Vinaigrette or your favorite dressing.
