Apple Hand Pie

Ingredients

2 -9 inch pie crust

4 cups apples, sliced

1/2 cup sugar

1 teaspoon cinnamon

1/2 teaspoon all spice

1/4 teaspoon salt

2 tablespoons corn starch

1/2 cups water for apples

1/3 cups water for corn starch

1 egg, beaten

Directions

Peel the apples and slice them

Place the apples in a large sauce pan and add the sugar, cinnamon, all spice and salt, toss the apples in the seasons then add 1/2 cup water and stir well

Cook the apple mixture on medium high until all the sugar is melted and the mixture is boiling stir constantly

After the apples are tender, about 10 minutes, mix the corn starch with 1/3 cup water and mix well

Add the corn starch liquid to the apples and remove the apples from the heat, continue to stir until the apple mixture is thick.

Set the apple mixture aside and let cool to room temperature.

Roll out each pie crust and cut in half to make 4 hand pies or into 4 parts for 8 hand pies.

If you are making the 4 pies, add 3 tablespoons of the apple mixture in the center of the round, and if you are making the 8 pies use 1-1/2 tablespoons of the apple mixture in the center of the round.

Moisten the edges of the dough circle with water and fold the other half over to form the pie, press the edges together to seal. I like to use the edge of the tines of a fork to crimp the edges, just the way my Grandmother did.

Brush the top of the pie with the beaten egg

Place the pies on a parchment lined baking sheet

Bake for 15 to 20 minutes at 400 degrees

Remove from the oven and let cool before serving (if you can)
