Apple Cookies With Maple Glaze

Ingredients for Apple Cookies

3 cups rolled oats

1 cup flour

1 teaspoon pumpkin pie spice

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup dark brown sugar

2 egg whites

1/2 teaspoon maple extract

1 teaspoon vanilla extract

1 cup Gala apples, cored, peeled and diced very small

Ingredients for Maple Glaze

3/4 cup confectioners sugar

1 teaspoon maple extract

2 tablespoons water

Directions

In a small bowl mix the oats, flour, pumpkin pie spice, and salt, set aside.

In a mixing bowl mix the softened butter and the brown sugar until very smooth.

Add the egg whites and the extracts, continue to mix until blended well.

Stir in the flour and oat mixture, then add the apples.

Scoop the cookie dough with a 1/4 cup scoop onto a parchment lined cookie sheet.

Gently flaten the cookie rounds.

Bake at 350 degrees for 18 minutes until golden brown on top.

Remove the cookies to a cooling rack and let cool completely.

While the cookies are cooling, mix the glaze.

Mix the cofectioners sugar, extract and water to desired thickness.

Drizzle the cookies with the glaze.

Let the glazed cookies set for at least 30 minutes giving the glaze a chance to set up.
