Kembang Kol Goreng Tepung (Cauliflower Fritters)

Bahan

  • 1 Kembang Kol sedang-potong per kuntum, 2 Telur-kocok

  • 1 st Garam, 85 gr Tepung beras, 1 sm Mentega-cairkan

  • 1 st Cabai bubuk, 140 ml Air es, 150 gr Terigu, Minyak

  • 1 st Kaldu bubuk, 1 st Lada bubuk, ½ st Baking powder

  • ½ st Ketumbar+1 cm Kunyit+2 Bawang putih-haluskan

  • 1 st Garam+600 ml Air hangat-aduk


Cara membuat

  • Rendam kembang kol di larutan air garam selama 30 menit agar bila ada kotoran/ulat/serangga, akan keluar/mati. Bilas dengan air biasa lalu rebus kembang kol ½ matang.

  • Campur terigu, tepung beras, baking powder, kaldu, cabai, telur & bumbu halus. Beri mentega cair, aduk. Tuangi air es sedikit2 sambil diaduk rata sampai adonan halus.

  • Panaskan minyak yang banyak. Celup tiap kuntum kol di adonan tepung lalu goreng hingga kekuningan. Angkat dan tiriskan di atas kertas penyerap minyak.


Ingredients

  • 1 medium Cauliflower-break into florets, 2 Eggs-beaten

  • 1 tsp Chili flakes, 1 tsp ground Pepper, frying Oil, Salt

  • 1 tsp Salt+600 ml warm Water-mix, 140 ml ice Water

  • 150 gr Flour, 85 gr Rice flour, 1 tbsp Butter-melted

  • ½ tsp Coriander+2 Garlic clove+1 cm Turmeric-grind

  • ½ tsp Baking powder, 1 tsp Broth powder


Directions

  • Soak the cauliflower in water+salt mixture for 30 minutes in order to remove & kill any unintended protein sources (such as worms/insect) & dirt. Rinse & then parboil the cauliflower.

  • Mix flour, rice flour, baking powder, chicken broth, chili flakes, eggs, ground spices & enough salt. Add in melted butter, stir to combine. Pour in ice water, a little at a time, & whisk until the batter smooth.

  • Dip cauliflower into the batter & then fry it in hot oil until golden brown. Remove from the heat & then put it in paper towel.
