Sayur Kare Jawa (Javanese Vegetables Curry)

Sayur Kare Jawa (Javanese Vegetable Curry) is a traditional dish of Central Java-Indonesia. This Curry dish combines fresh vegetables with a tasty light curry sauce. The curry sauce itself taste a bit sour & fresh. It's a great variation & different than the usual curry recipes. To make it into a vegetarian version, substitute fried tofu cubes/tempeh for the beef & vegetable broth in place of beef/chicken broth. Add tofu cubes/tempeh at the very end & then cook for 10 minutes. This curry is a delicious & simple addition to your lunch or dinner.

Bahan

  • 200 gr Daging Sapi/Ayam-potong, 200 gr Kentang-potong

  • 1 Tomat+5 Daun kol+100 gr Buncis & 150 gr Wortel-iris

  • 1½ st Garam, 3 Cabai merah & 1 Daun bawang-iris

  • 2 st Air jeruk nipis, 2 sm Air asam, 2 Daun salam

  • 1 Sereh & 2 cm Lengkuas-geprek, 300 ml Santan

  • 2 Daun jeruk, 500 ml Kaldu

Haluskan:

  • 2 Bawang putih, 2 st Ketumbar, ½ st Lada, 2 cm Jahe

  • 3 Kemiri, 5 Bawang merah, 3 cm Kunyit, 1 st Gula


Cara membuat

  • Tumis bumbu halus, daun jeruk, salam, lengkuas & sereh. Masukkan daging, aduk, tuangi kaldu, didihkan. Masukkan kentang, air asam & cabai. Setelah kentang ½ matang, beri garam & santan, didihkan.

  • Masukkan kol, wortel, buncis, tomat, daun bawang & air jeruk, aduk sampai matang.


Ingredients

  • 200 gr Beef/Chicken meat-sliced, 200 gr Potatoes-sliced

  • 5 sheets Cabbage+3 Red chilies+1 Green onions-sliced

  • 1 Tomato+100 gr Beans+150 gr Carrot-sliced

  • 2 Kaffir lime leaves, 2 Bay leaves, 2 tsp Lime juice

  • 2 cm Galangal & 1 Lemongrass-bruised, 500 ml Broth

  • 2 tbsp Tamarind juice, 300 ml Coconut milk, 1½ tsp Salt

Grind into a paste:

  • 5 Shallots, 2 cm Ginger, 2 Garlic cloves, 3 cm Turmeric

  • 3 Candlenuts, 2 tsp Coriander, ½ tsp Pepper, 1 tsp Sugar


Directions

  • Sauté spices paste, lime leaves, bay leaves, galangal & lemongrass. Put in the meat; stir well. Pour in broth & bring it to a simmer. Add in potatoes, tamarind juice & chilies. After the potato starts to soften, pour in coconut milk & season with salt. Bring it to a simmer.

  • Put in cabbage, carrots, beans, tomato, green onions & lime juice, stir well until all are cooked.
