Bahan
400 gr Terigu serba guna+ekstra, 1 Telur ukuran besar
80 gr Mentega-suhu ruang, 1 sm Minyak sayur-ekstra
8 gr Ragi instan, 250 ml Susu hangat, 1 st Garam
35 gr Gula, Gula bubuk-taburan (opsional)
Isian:
4-5 sm Nutella, 2½ sm Selai kacang, Biji wijen sangrai
Olesan:
1 Telur+1 sm Susu+¼ st Vanili
Cara membuat
Masukkan terigu, garam, gula & ragi di mangkuk. Aduk hingga tercampur rata. Tuangi susu, telur, mentega & minyak. Aduk lalu keruk sisi2 mangkuk, termasuk dasarnya untuk memastikan semua bahan tercampur rata. Uleni adonan hingga terbentuk adonan yang halus (± 10 menit). Bulatkan adonan lalu letakkan di mangkuk beroles sedikit minyak. Tutupi mangkuk dengan plastik & letakkan di tempat hangat. Biarkan hingga mengembang 2X nya (± 1½ jam).
Hangatkan Nutella & selai kacang secara terpisah di microwave beberapa detik, untuk mempermudah pengolesan di adonan nanti. Taburi permukaan kerja, tangan & rolling pin dengan terigu. Taruh adonan di permukaan kerja. Bagi menjadi 4 sama besar lalu bulatkan adonan.
Yang akan kita lakukan berikutnya adalah membentuk & memotong adonan, mengulasi dengan isi & penumpukan adonan. Kerjakan adonan satu persatu. Ambil satu adonan & tutupi sisa adonan hingga siap untuk dibentuk (mencegah adonan kering).
Gilas adonan pertama dengan rolling pin membentuk lingkaran. Taruh piring/dasar pan bulat berukuran 25 cm di permukaan adonan. Dengan pisau tajam, potong membentuk lingkaran. Singkirkan sisa potongannya. Letakkan adonan itu di atas pan panggang tak bertepi yang sudah dialasi kertas perkamen. Ulasi dengan nutella & ratakan ke seluruh permukaan sampai 2½ cm sebelum tepian luar (2½ cm ini jangan diulas). Taburi atasnya dengan wijen
Gilas & potong adonan kedua seperti yang pertama. Angkat adonan kedua dengan rolling pin lalu letakkan di atas adonan pertama. Ulasi adonan kedua dengan selai kacang & taburi wijen.
Gilas & potong adonan ketiga, letakkan di atas adonan kedua. Ulasi adonan ketiga dengan Nutella lalu taburi dng wijen.
Gilas & potong adonan keempat, letakkan di atas lapisan ketiga.
Telungkupkan gelas di tengah2 lingkaran, tekan sedikit saja, hanya untuk memberi tanda batas (jangan dipotong). Sisihkan gelas. Potong lapisan lingkaran menjadi 16 sama besar, dimulai dari batas terluar tanda gelas, lurus ke arah terluar batas lingkaran. Ambil & angkat sedikit ujung dari 2 potongan lalu pelintirlah masing2 dua kali kearah yang berlawanan. Angkat & tekan kedua ujung sisi yang berdekatan untuk merekatkan keduanya. Tekan juga kedua sisi yang berjauhan & rapihkan sambungan keduanya. Lakukan hati2, jangan terpotong dari lingkaran tengahnya. Ulangi proses untuk potongan2 lain. Tutupi adonan longgar saja & biarkan ± 30 menit hingga mengembang. Panaskan oven 180°C, pasang rak di sepertiga bagian bawah dari oven.
Ulasi permukaan adonan dengan bahan olesan lalu panggang 25-30 menit (sampai kuning kecokelatan). Bila adonan terlihat terlalu cepat menjadi cokelat, tudungi dengan aluminium foil agar tidak gosong. Keluarkan roti dari oven. Ulas permukaannya dengan mentega (opsional) lalu letakkan di atas rak kawat. Biarkan hingga sedikit mendingin (± 5 menit). Taburi permukaan roti dengan gula bubuk & hidangkan selagi hangat.
Ingredients
400 gr all purpose Flour+extra, 250 ml warm Milk
8 gr Instant yeast, 1 large Egg, 35 gr Sugar, 1 tsp Salt
80 gr Butter-softened, 1 tbsp Vegetable oil+extra
Icing sugar-sprinkle (optional)
Egg wash:
1 Egg+1 tbsp Milk+¼ tsp Vanilla extract
Filling:
4-5 tbsp Nutella, 2½ Peanut butter
toasted Sesame seeds
Directions
In a bowl, put the flour, salt, sugar & yeast; mix until everything is evenly distributed. Pour in the milk, egg, butter & oil. Stir & then scrape all sides of the bowl, including the bottom, to make sure you’ll bring all ingredients in. Knead the dough until it forms a smooth dough (~ 10 minutes). Bring it into a ball & put it in a slightly greased bowl. Cover the bowl with plastic wrap & let it proof in a warm place for ~ 1½ hours, to allow it to doubled in size.
Warm up the Nutella & peanut butter separately in the microwave for a few seconds just to make it easier to spread on the dough. Flour your working surface, hands & rolling pin. Put dough in the working surface & divide it into 4 evenly. Shape them into balls.
What we will do next is shaping & cutting the dough, spread the filling & layering. We will have to do it one by one. Take 1 of the dough & cover the rest until you’re ready to shape it (to prevent the dough from drying).
Flatten the first dough with a rolling pin into a circle. Put a 25 cm plate/round baking pan on the dough surface. Use a sharp knife to cut out a circle. Discard excess dough. Put dough in a rimless baking sheet lined with a parchment paper. Spread Nutella in the centre of the circle; spread it out & leave ~2½ cm border all away around the circle. Sprinkle with sesame seeds on top.
Roll & cut the second dough with the same procedure. Using the rolling pin to lift up the second circle & then put it on top of the first dough circle. Spread the second dough surface with peanut butter & then sprinkle with sesame seeds on top.
Roll & cut the third dough, place it on top of the second dough. Spread the third dough with Nutella & sprinkle with sesame seeds.
Roll & cut the forth dough & place it on top of the third dough.
Put a glass upside down in the centre of the top dough layer. Press a bit just to leave a mark there. Remove the glass. Carefully cut the stack evenly into 16 strips, starts from the outer side of the glass mark straight to the circle border. Take & lift a bit the end of 2 strips; give it a full 2 turn twist in the opposite direction. Lift & pinch the closest edges to seal it together. Then pinch also the other edges. Seal all neatly. Being careful not to snap it off from the centre of circle. Repeat this process with the rest of strips. Cover the dough loosely & let it sit to rise for ~ 30 minutes. Preheat the oven to 180°C, put the oven rack in the lower third of the oven.
Brush the surface with egg wash & then bake it for 25-30 minutes (until golden brown). If you see that the top browning too quickly, cover the bread with a foil tent to prevent over-browning. Remove bread from the oven. Brush the top with melted butter (optional) & then put it in a wire rack. Let it slightly cool down (~5 minutes). Dust the top with icing sugar & serve it warm.
