Udang & Tahu Masak Tauco (Shrimps & Tofu Cooked with Fermented Soy Beans)
Udang & Tahu Masak Tauco (Shrimps & Tofu cooked with fermented Soy beans) is a traditional dish of Medan (North Sumatra-Indonesia). Tauco is a paste made of fresh mashed soybeans. It has a unique fermented soybeans taste & chunky. Tauco commonly used to flavor traditional dishes from Sumatra & Java .

Bahan
250 gr Udang sedang/besar-kupas, 2 st Lokio cincang
1 pak Tahu sutra-potong2 ½ cm, 3 sm Tauco asin
125 ml Air, 2 Daun salam, 1 Tomat & 1 Kailan-iris2
2 cm Lengkuas & 1 Sereh-geprek, 1 st Gula
4 Bawang merah+3 Cabai Keriting+3 Cabai hijau-Iris2
5 Rawit utuh, Maizena secukupnya
Haluskan:
1 Bawang merah, 2 Bawang putih, 2 Cabai keriting
Cara membuat
Guling2kan tahu di maizena lalu goreng sampai kuning kecokelatan. Sisihkan.
Tumis bumbu halus, irisan bawang & cabai. Masukkan tauco, sereh, salam, lengkuas, gula & air. Masak hingga harum. Beri lokio, kailan, tomat, udang & tahu. Aduk hingga udang matang.

Ingredients
250 gr Shrimps-peeled, Corn starch, 2 cm Galangal-bruised
1 pack Silken egg tofu-slice into ½ cm, 1 Lemongrass-bruised
125 ml Water, 3 tbsp Fermented soy beans, 2 Bay leaves
5 Birds eye chilies, 1 tsp Sugar, 2 tsp chopped Chives
1 Tomato & 1 Kai-lan/Chinese broccoli-cut
4 Shallots+3 Cayenne peppers+3 Green Chilies-sliced
Grind into a paste:
2 Garlic cloves, 2 Cayenne peppers, 1 Shallot
Directions
Coat tofu slices with corn starch & then fry until golden brown. Set it aside.
Sauté ground spices, shallots & chilies. Put in fermented Soy beans, lemon grass, bay leaves, galangal, sugar & water. Cook until fragrant. Add in chives, kai-lan, tomato, shrimps & fried tofu. Stir well until the shrimps are cooked.
