Sambal Tempe (Spicy Crushed Tempeh/Tempeh Sambal)

Bahan

  • 150 gr Tempe-potong2, 2 st Garam, 1 sm Kecap manis

  • 1 Bawang putih & 1 st Ketumbar-haluskan, 250 ml Air

  • 7 lembar Kemangi & 1 Daun Bawang-iris, 2 Daun jeruk

  • 1 st Air jeruk limau, Minyak

Bahan Sambal:

  • 2 Bawang merah, 1 Bawang putih, 3 Cabai hijau

  • 5 Rawit, 1 cm Kencur, 1 Tomat hijau, ½ cm Jahe

  • ½ st Gula, 1 st Garam


Cara membuat

  • Campur air, bawang putih, garam & ketumbar. Rendam tempe di larutan tsb 30 menit. Tiriskan lalu goreng. Angkat tempe dari api kmd ulek kasar. Sisihkan

  • Ulek kasar bahan sambal. Tumis dng daun jeruk. Mskkan tempe goreng ulek & kecap, aduk rata. Goreng sampai kering. Beri air jeruk limau, irisan kemangi & daun bawang lalu aduk rata.


Ingredients

  • 150 gr Tempeh-sliced, 250 ml Water, 2 tsp Salt

  • 1 tbsp sweet Soy sauce,1 tsp Kaffir lime juice

  • 1 Garlic clove & 1 st Coriander-grind, frying Oil

  • 7 Lemon basil leaves & 1 Green onion-sliced

  • 2 Kaffir lime leaves

Chili paste ingredients:

  • 5 Bird's eye chilies, ½ cm Ginger, 1 Garlic clove

  • 1 cm Lesser galangal, ½ tsp Sugar, 2 Shallots

  • 3 green Chilies, 1 green Tomato, 1 tsp Salt


Directions

  • Mix water with salt, ground garlic & coriander. Soak tempeh in the mixture for 30 minutes; drain & then fry until golden brown. Roughly crush tempeh into small pieces. Set it aside.

  • Roughly crush chili paste ingredients. Sauté the chili paste & put in lime leaves. Stir in tempeh & sweet soy sauce. Cook until it dries. Add in lime juice, lemon basil leaves & green onion; stir to combine it well.
