Fu Yung Hai (Egg Fu Yung)

Bahan

Bahan utama:

  • 120 gr Daging kepiting/Ayam cincang, 4 Telur

  • ½ cup Bunga kol & Rebung-iris2, ½ st Garam

  • 3 Daun bawang & 1 Bawang bombay kecil-iris

  • 1 st Minyak wijen, 2 Bawang putih-haluskan

  • ½ st Pala bubuk, 5 st Terigu, ½ st Lada bubuk

Saus:

  • 1 Bawang putih-haluskan, ½ sm Minyak wijen

  • 3 st Gula, 1 sm Pasta tomat, ½ st Lada bubuk

  • ¼ Wortel & Paprika/Cabai-iris, 150 ml Kaldu

  • ½ st Maizena+1 sm Air, 1 sm Saus hoisin

  • 1 sm Saus tiram, 1 sm Saus tomat, ½ st Garam


Cara membuat

  • Kocok telur sampai naik. Campur rata dengan semua bahan utama. Panaskan minyak dng api sedang di penggorengan, tuang adonan hingga terbtk dadar. Masak hingga matang kecoklatan di dua sisinya, angkat.

  • Saus: Tumis bawang putih, beri kaldu & didihkan. Masukkan wortel, paprika/cabai & semua bahan saus (kecuali maizena & minyak wijen). Setelah matang, beri maizena & minyak wijen, aduk hingga saus mengental. Siram di atas dadar seblm dihidangkan.


Ingredients

Main Ingredients:

  • 120 gr Crab meat/minced Chicken, 1 tsp Sesame oil

  • ½ cup Cauliflower & Bamboo sprouts-sliced, ½ tsp Salt

  • 3 Green onion & 1 small Onion-sliced, 5 tsp Flour

  • ½ tsp ground Nutmeg, ½ tsp ground Pepper, 4 Eggs

  • 2 Garlic cloves-grind

Sauce:

  • 1 Garlic clove-grind, 1 tbsp Tomato sauce, 3 tsp Sugar

  • 150 ml Chicken broth, ½ tsp Corn starch+1 tbsp Water

  • 1 tbsp Hoisin sauce, 1 tbsp Tomato paste, ½ tsp Salt

  • 1 tbsp Oyster sauce, ¼ Carrot & Paprika/Chili-sliced

  • ½ tbsp Sesame oil, ½ tsp ground Pepper


Directions

  • Beat the Eggs until fluffy. Mix all main ingredients well. Heat frying oil in a medium size frying pan over medium heat, put in the batter & make a thick omelette. Fry omelette until golden brown on both side.

  • Sauce: Sauté ground garlic, pour in chicken broth, simmer for 3 minutes. Put in carrot, paprika/chili & all sauce ingredients (with the exception of corn starch & sesame oil). Pour in sesame oil & corn starch, stir until the sauce thickens. Pour sauce over the omelette before serving.
