Bahan
Bahan Saus:
2 st Maizena+2 sm Air, 2 cm Jahe & 2 Bawang putih-cincang
4 sm Jus nanas, 2 st Cuka, 1 st Lada, 2 st Angciu (opsional)
1 Wortel-iris halus, 6 sm Saus tomat, 300 ml Air, 8 st Gula
½ Bawang bombay+250 gr Nanas+½ Paprika/3 Cabai-iris
1 sm Kecap asin, 3 sm Mentega/Margarin, 1 st Garam
Bahan Ayam:
600 gr Fillet dada ayam-iris2 tipis, 2 Bawang putih-haluskan
1 sm Kecap asin, 1 st Garam, Tepung panir, Minyak goreng
½ Jeruk nipis, 1 st Ketumbar bubuk, 1 st Lada, 1 Telur
Tepung terigu secukupnya+½ st Baking soda
Cara membuat
Lumuri ayam dengan bawang putih, air nipis, lada, garam & ketumbar, diamkan ± 30 mnt. Baluri ayam dng terigu+baking soda, celup di telur & baluri dng panir. Goreng dalam minyak panas sampai kecokelatan.
Saus: Tumis bawang putih, bombay, paprika & jahe dng mentega. Mskkan wortel & nanas, aduk hingga rata. Beri juice nanas, air, bumbu2, angciu, cuka, saus tomat. Didihkan. Tuangi larutan maizena. Aduk hingga mengental.
Taruh ayam di piring saji, siram dng sausnya. sesaat sebelum dihidangkan. Aduk hingga ayam terlapis saus dng rata lalu hidangkan.
Ingredients
Sauce ingredients:
2 tsp Corn starch+2 tbsp Water, 1 tbsp salty Soya sauce
2 cm Ginger & 1 Garlic clove-minced, 2 tsp Rice vinegar
250 gr Pineapple+½ Onion+½ Paprika/3 Red chilies-sliced
1 Carrot-matchstick sliced, 300 ml Water, 8 tsp Sugar
6 tbsp Tomato sauce, 2 tsp Chinese rice wine (optional)
3 tbsp Butter/Margarine, 1 tsp Salt, 1 tsp Pepper
4 tbsp Pineapple juice
Chicken ingredients:
600 gr Chicken breast fillet-sliced, 2 Garlic cloves-grind
1 tsp ground Coriander, 1 tbsp salty Soya sauce, 1 Egg
½ Lime, 1 tsp Salt, 1 tsp Pepper, enough Breadcrumbs
enough Flour+½ tsp Baking soda, frying Oil
Directions
Rub the chicken with garlic, lime juice, pepper, salt & coriander. Let it stand for 30 mins. Roll the chicken in the flour mixture; dip slightly in the egg; then roll them in the bread crumbs. Fry until golden brown & then set aside.
Sauce: Sauté garlic, onion, ginger & paprika with butter. Stir in the carrot & pineapple, combine well. Pour in water, pineapple juice, Chinese rice wine, vinegar, tomato sauce & seasoning. Bring it to a simmer, then pours in the cornstarch mixture. Cook until the sauce becomes rather thick.
Place the fried chicken in a serving plate; then pour the sauce over. Toss to lightly coat the chicken with the sauce & serve immediately.
