Homemade White Cake Mix

makes the equivalent of one box of cake mix

Ingredients
  • 2 1/2 cups all purpose flour
  • 2 cups sugar
  • 1/2 cup dry milk powder or buttermilk powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch of fine salt
Directions
  1. Whisk flour, sugar, milk powder, baking powder, baking soda, and salt together.  Store in airtight container for up to 3 months.
To use mix to make a cake, add the following:
  • 1 1/4 cups water
  • 1/2 cup shortening
  • 4 large egg whites
  • 1 teaspoon pure vanilla extract
Directions
  1. Preheat oven to 350F.
  2. In the bowl of a stand mixer (or using a hand mixer), combine all ingredients on low speed until well mixed, then increase speed to medium and mix for 2 minutes.
  3. Pour batter into pans that have been sprayed with Baker's Joy and bake according to the times given below.  A toothpick inserted in the center should come out clean when done.
  4. Cool in pan for 5 minutes before unmolding; cool completely before frosting.
    • Standard cupcakes - 12-15 minutes
    • Two 8" cake rounds - 20-25 minutes
    • Two 9" cake rounds - 20-25 minutes
    • One 9x13" rectangle - 35-40 minutes
    • One bundt or tube pan - 45-50 minutes
