Chocolate Pasta

makes 1 pound

  • 2 1/2 cups all purpose flour, plus more if needed
  • 1/4 cup Dutch-processed cocoa powder
  • 1/4 cup confectioners sugar
  • pinch fine salt
  • 3 large eggs
  • 1 tablespoon Hershey's chocolate syrup
  • 1 teaspoon pure vanilla extract
  1. In the bowl of a food processor, pulse together the flour, cocoa, sugar, and salt.  Add the eggs, chocolate syrup, and vanilla extract; pulse until a ball of dough forms (add flour if too wet, add water if too dry).  Knead dough on counter for 5 minutes; wrap well in plastic and rest for 20-30 minutes.  
  2. Divide dough into small portions and roll using pasta machine, flouring lightly to keep pasta from sticking.  
  3. Cut pasta into ribbons by hand or using the thickest cutter on the pasta machine.
  4. Cook pasta in boiling water for 3 minutes; drain and immediately toss with strawberry cream sauce.
