Date Delight Oatmeal Cookies

Ingredients

    • 16 tablespoons unsalted butter, room temperature

    • 1 cup packed brown sugar (light or dark)

    • 1/2 cup granulated sugar

    • 2 large eggs

    • 1 teaspoon pure vanilla extract

    • 1 1/2 cups all purpose flour

    • 1 teaspoon baking soda

    • 1 teaspoon of cinnamon

    • 1/4 teaspoon fine salt

    • 3 cups quick-cooking oats

    • 8-ounces chopped dates (about 1 cup)

Directions

    1. Preheat oven to 350F.

    2. In a medium bowl, combine flour, baking soda, cinnamon, and salt; set aside.

    3. In the bowl of a stand mixer, cream together butter and sugars.

    4. Add eggs and vanilla.

    5. Add flour mixture, just until combined.

    6. Stir in oats and chopped dates.

    7. Using a #50 scoop, portion 12 scoops of dough per sheet tray and bake for 11-14 minutes until golden brown around the edges.

    8. Cool cookies on sheet tray for a few minutes before transferring to a cooling rack. Makes 4 dozen cookies.
