Original Day Family Cookbook
Great for buffet.
Ingredients:
10 oz. pkg. frozen chopped spinach
1-½ cups chopped zucchini
1 10-oz. pkg. frozen cut green beans, thawed
1 large onion, chopped
¼ cup water
1 clove garlic, minced
1-½ teaspoon salt
1/8 teaspoon pepper
1-½ teaspoon dried basil, crushed
1/8 teaspoon nutmeg
4 eggs, beaten
¼ cup parmesan cheese
paprika
Directions:
Drain spinach. In large skillet cook spinach in hot oil 2-3 mins. Add zucchini, green beens, onion, water, garlic, salt, pepper, basil, and nutmeg. Cover and simmer for 10 mins. stirring occasionally. Remove from heat. Gradually stir in 1-½ cups of the vegetables into beaten eggs. Return egg mixture and remaining vegetables to skillet. Mix well. Turn into 10x6x2 inch baking dish and place in a larger shallow pan on oven rack. Add boiling water to 1 inch in larger pan. Bake uncovered at 350o for 25-30 min. or until set. Sprinkle with parmesan cheese and paprika. Bake 2-3 mins. more.
