Original Day Family Cookbook
One of the two entres that you'll be served if ever invited to Peg's for dinner. (Before JJ came along, that is!)
Ingredients:
Chicken breasts or cut up broiler
Lemon juice
Salt & pepper
Directions:
Prepare chicken breasts or cut up broiler for cooking by trimming, washing and wiping dry. Use large baking pan or broiling pan (remove rack from pan - chicken is laid in pan). Lay pieces of chicken in pan, bone side up. Brush with lemon juice or squeeze lemon juice over it, sprinkle with salt and pepper. Heat broiler unit, leave oven door open or ajar. Place pan of chicken on rack placed 2 or 3 inches below broil unit. Allow chicken to broil until brown or about 5 min.
Remove pan of chicken from oven. Place oven rack lower in oven and heat to 475o. In meantime, boil some water. Turn pieces of chicken in pan so that the skinside is up this time. Squeeze lemon juice on it. Salt and pepper chicken. Turn boiling water into pan to make 3/4 inch deep. Place pan in 475o oven and bake for 25 min.
