Original Day Family Cookbook
Ingredients:
1 pound vermicelli
½ cup olive oil
½ cup finely diced carrots
1 tablespoon finely chopped garlic
2 tablespoon finely chopped fresh ginger
2 tablespoon chopped scallions
1 teaspoon oregano
salt
½ to ½ teaspoon hot red pepper flakes
½ cup dry vermouth
1 cup water
4 tablespoon butter
Parmesan cheese
Directions:
In oil, cook carrots about 3 min. Add garlic, ginger, scallions, oregano, salt, pepper flakes, and vermouth. Cook about 5 min. Add 1 cup water. Bring to boil and simmer no more than 15 min. Meanwhile be cooking the pasta. When the pasta is done, drain and toss with butter, then toss with 3/4 of the sauce. Serve in bowls with sauce on top. Add cheese on top.
