Original Day Family Cookbook
Ingredients:
½ cup chopped onions
1 tablespoon butter
2 teaspoon curry powder
1 cup rice
¼ cup dried currants
1 bay leaf
1-½ cup chicken broth
salt & pepper to taste
1 tablespoon butter
1/3 cup toasted slivered almonds
Directions:
Cook chopped onions in 1 tablespoon butter until onions are wilted. Add curry powder. Add rice - stir. Add dried currants and bay leaf. Add chicken broth, salt & pepper to taste. Bring to boil. Cover closely. Simmer 17 min. exactly. Swirl in 1 tablespoon butter and 1/3 cup toasted slivered almonds. Serves 4.
