Best-of-Mine Muffins

Ingredients:

    • l cup All-Bran

    • l cup boiling water

    • ½ cup (heaping) vegetable shortening

    • 1-¼ cup sugar

    • 2 eggs

    • 2 cups buttermilk

    • 2 cups Bran Buds

    • 3 cups flour sifted

    • 2-½ teaspoon baking soda

    • l teaspoon salt

Directions:

  1. Pour boiling water over All-Bran and allow to set while mixing ingredients.

  2. Cream shortening and sugar.

    1. Add eggs one at a time, beating well after each.

    2. Blend in buttermilk.

    3. Add All Bran and water mixture.

    4. Add Bran Buds.

    5. Sift flour, soda, and salt and add.

    6. Turn into large container and cover tightly.

    7. Keep refrigerated for up to 6 weeks.

    8. Do not stir, merely spoon into muffin tins as you get ready to bake muffins.

    9. Bake at 400o for 16-20 min. or until top is firm.

Variations:

(Substitute l 15-oz.pkg. Raisin Bran for All Bran and Bran Buds - no water.)

(OR 1 cup All-Bran or Bran Buds and 2 large shredded wheat, crushed).
