Directions:
Cream cheese: Blend 1 cup low-fat cottage cheese with ¼ cup margarine to equal 1 cup cream cheese that is lower in saturated fat and cholesterol (but not lower in total fat).
Milk: In most recipes for cakes and muffins, fruit juice can be used in place of milk. Add ½ teaspoon of baking soda to the recipe if the juice is acid. If whole milk is needed, you can make it by adding 2 tablespoon of melted butter or margarine to 1 cup of skim milk; or mix ½ cup of evaporated (whole) milk with ½ cup of water.
