Chicken Casserole

Serves 8
Ingredients:
2 tablespoon butter
3/4 cup chopped celery
½ tablespoon chopped onion
1 tablespoon chopped green pepper
2 cup soft bread crumbs
4 cup diced cooked chicken
1 cup cooked rice
2 tablespoon chopped pimento
1 tablespoon salt
4 eggs
1-½ cup milk
1-½ cup chicken broth
Directions:
Saute celery, onion, and green pepper in butter. Add soft bread crumbs, chicken, rice, pimento and salt. Beat eggs.
Add milk and chicken broth. Stir in other mix. Grease 13x9 pan. Bake 350o oven 50-60-mins. Cut in squares and top with sauce.
Sauce:
6 tablespoon flour
¼ cup butter
2 cup chicken broth
1 can (4 oz.) sliced mushrooms, drained
1 teaspoon chopped parsley
1 teaspoon salt
1 teaspoon lemon juice
½ teaspoon paprika
1 cup light cream or half-half
Slowly add chicken broth to flour and butter. Stir until thickened. Stir in sliced mushrooms, parsley, salt, lemon juice, paprika, and light cream or half-half. Stir gently over low heat until hot.
