Original Day Family cookbook
Ingredients:
1-½ cups sugar
6 tablespoon cornstarch or 3/4 cup flour
3 egg yolks
grated lemon rind
6 tablespoon lemon juice
¼ teaspoon salt
2-¼ cups boiling water
1-½ tablespoon butter
Directions:
Combine sugar, cornstarch and salt. Mix and add to slightly beaten egg yolks. Add grated lemon rind and juice. Add boiling water. Mix well, then cook in saucepan, stirring constantly using low heat, until thick and clear. Add butter, stir, cool slightly, turn into baked pie shell. Top with meringue.
Never Fail Meringue:
3 egg whites
3 tablespoon cold water
1 teaspoon baking powder
6 tablespoon granulated sugar
Pinch of salt
Put egg whites, water, baking powder, and salt into mixing bowl. Beat until stiff, add sugar gradually. Pile on pie. Bake at 425o for a few min, watch carefully.
