Original Day Family Cookbook
Ingredients:
1 tablespoon oil
1 lg onion chopped
2 cup mushrooms, slice
1 clove garlic
1 egg
1 tablespoon whole wheat flour
2 cup low-fat cottage cheese
10 oz. frozen chopped spinach, drained
3 cup cooked brown rice
½ teaspoon thyme pepper
2 tablespoon sunflower seeds
1 tablespoon Parmesan cheese
Directions:
Saute onion, mushrooms, and garlic in oil until tender. In small bowl mix egg, whole wheat flour, and cottage cheese. Add to vegetables and spinach, brown rice, and thyme pepper. Turn into greased 12x8" baking dish. Top with sunflower seeds and Parmesan cheese. Bake 375o oven at least 30 mins.
