Original Day Family cookbook
The blueberry version of this is Dad's favorite way to enjoy fresh bluberries. You can also use apples or rhubarb.
Ingredients:
2 cups blueberries
Juice of ½ lemon
½ teaspoon cinnamon
1-3/4 cup sugar
3 tablespoon butter
½ cup milk
1 cup flour
1 teaspoon baking powder
¼ teaspoon salt
1 tablespoon cornstarch
1 cup boiling water
Directions:
Line 8 or 9 inch square pan (greased) with blueberries. Sprinkle with lemon juice and cinnamon.
Cream 3/4 cup sugar and butter. Add milk. Sift and add flour, baking powder, and salt. Spread batter over berries.
Mix remaining 1 cup sugar, cornstarch, and a pinch of salt. Spread over batter. Pour boiling water over all. Do not stir. Bake at 375o for 1 hour.
