Ingredients:
1 cup strawberry jam
1 cup oleo
1-½ cups sugar
1 teaspoon vanilla
¼ teaspoon lemon extract
4 eggs
3 cups flour
1 teaspoon salt
½ teaspoon soda
1 teaspoon cream of tartar
½ cup sour cream
1 cup nuts
Directions:
Cream butter, sugar, vanilla, and lemon extract until fluffy. Add eggs, one at a time, beating well after each addition. Sift together dry ingredients. Combine jam and sour cream. Add jam mixture alternately with dry ingredients, beating well after each addition. Stir in nuts. Divide batter among 4 greased and floured 4-½ x 2-¼ x 2-¼ inch loaf pans. Bake approx. 50-55 min. at 350o. Cool 10 mins. in pans, then remove and allow to cool before storing.
Variations:
I cut back to 1-¼ cups of sugar OR use 2 standard-size loaf pans.
