Original Day Family Cookbook
Ingredients:
½ cup finely chopped carrots
½ cup finely chopped celery
¼ cup butter
2 tablespoon minced onion
3 tablespoon flour
2 cups scalded milk
2 cups chicken broth
½ lb. processed cheddar cheese, shredded
Directions:
Cook carrots and celery in boiling salted water just to cover, until just tender. In butter in double boiler top, over low heat, saute minced onion until tender. Place double boiler over boiling water; blend in flour, scalded milk, and chicken broth. Stir until slightly thickened. Stir in shredded cheddar cheese until melted. Add celery-carrot mixture; cook 10 min.
Serve with croutons - toast 2 cups bread cubes under broiler until golden, toss with ½ cup grated Parmesan cheese and ½ cup garlic salad oil.
Variations:
OR cook l pkg. frozen chopped broccoli (in place of carrots and celery) in chicken broth and add to milk mixture.
