Original Day Family cookbook
Ingredients:
1 package yellow or white cake mix
1 package (3 oz) fruit-flavored gelatin
3/4 cup liquid (fruit juice, wine, water)
3/4 cup salad oil
4 eggs, added one at a time
OR:
1 package cake mix
1 package instant pudding
1 cup of a liquid
½ cup salad oil
4 eggs, added one at a time
Directions:
You can add to either recipe nuts, fruit, additional flavoring.
Put all ingredients, except eggs, in electric mixer and beat for 2 min. Beat in the eggs one at a time. Pour into a well-buttered and lightly floured pan of a 2-½-quart capacity, but 3-quart if part of liquid is alcohol. Cooking time will depend upon the thickness of the cake and may take from 30-50 min. at 350o. The cake is done when it shrinks from the sides of the pan and a toothpick stuck in the center comes out clean. Let cool 20 min. before removing from pan.
If you use a liquid glaze, prick the top of the cake and pour it over while the cake is still warm.
Glaze Formulas:
Dissolve ½ cup powdered sugar in ¼ cup fruit juice or wine.
Heat ½ cup sugar in ¼ cup liquid until sugar dissolves.
Cook ½ cup sugar, ½ stick of butter, 3 tablespoon liquid, until sugar dissolves.
Variations:
CHOCOLATE: Chocolate cake mix and instant pudding, with coffee for the liquid.
Glaze: ½ cup sugar, ½ stick butter, 3 tablespoons rum cooked together, or 2/3 cup brown sugar, ¼ stick butter, 3 tablespoons water cooked together.
