Burgundian Beef

Ingredients:

  • 6 slices bacon

  • 3 pounds beef

  • 3 cups Burgundy wine

  • 2 cups beef boullion

  • 1 tablespoon tomato paste

  • 2 cloves garlic, minced

  • 1 bay leaf

  • ½ teaspoon thyme leaves, crushed

  • ¼ cup oleo

  • 1 pound mushrooms, sliced

  • 1 jar whole onions (*For family fare, I substitute 2 sliced onions)

  • ½ cup flour

Directions:

Cut bacon in ½ inch strips. Cook until crisp. Remove pieces. Brown beef in cubes in fat. Stir in bacon bits.

Heat wine, beef boullion, tomato paste, garlic, and bay leaf to boiling. Bake at 325o for 3 hours. Melt oleo in skillet. Add sliced mushrooms. Cook until brown. Add onions. Take liquid from onions and 1 cup liquid from beef mixture. Add flour. Stir until thick. Pour into beef mixture. Heat to boiling. Simmer for 45 min. Cover and refrigerate overnight. Reheat and serve.
