This makes a very light, fluffy cheesecake. Not as rich as the more traditional kind, but just as good.

Ingredients:
1 package lemon jello
1 large package cream cheese
1 cup sugar
1 teaspoon vanilla
Large can of evaporated milk
Directions:
First dissolve package lemon jello in 1 cup hot water. Chill until syrupy.
In the meantime, blend cream cheese, sugar, and vanilla. Set aside.
Take large can of previously chilled evaporated milk and whip in large bowl. Add gelatin syrup to chilled milk and whip again. Whip in cheese-sugar mixture. The result should be fairly fluffy. Pour filling in large pan lined with graham cracker crumbs. Sprinkle crumb mix on top. Chill 1 hour.
Crumb Mix:
2 cups graham cracker crumbs
1 stick melted oleo
