Original Day Family Cookbook
Ingredients:
4 skinned, boneless large chicken breast halves (about 1 lb. total)
1/3 cup apple jelly
2 tablespoon dry sherry
2 teaspoon lemon juice
¼ teaspoon salt.
3/4 cup seedless red grapes (cut in half lengthwise)
3 parsley sprigs, snipped
Directions:
Wash chicken and pat dry. Spray a cold large skillet with nonstick coating. Heat skillet over medium-high heat. Add chicken to skillet. Cook 8-10 mins turning once, til no longer pink. Remove chicken to serving plates.
To skillet add apple jelly, dry sherry, lemon juice, and salt. Cook and stir til jelly is melted. Add seedless red grapes (cut in half lengthwise) and parsley sprigs snipped. Heat through. Spoon over chicken.
