Scallops Cornucopia

Ingredients:
1 lb. bay or cape scallops
Lemon juice
½ cup mayonnaise
2 teaspoon sugar
1 tablespoon lemon juice
4 teaspoon grated orange peel
1 cup celery, thinly sliced
1 can (11 oz) mandarin oranges, drained
½ cup ripe olives, sliced
2 tablespoon scallions
salt and white pepper
Directions:
Put scallops and some lemon juice in boiling water. Bring to boil again and take off heat.
Make dressing with remaining ingredients. Serve on greens with avocado halves, thinly sliced, but not all the way through on one end, so that they can be fanned out. Or on cantalop slices.
