Original Day Family Cookbook
Good buffet dish.
Ingredients:
1 oz. garlic clove, peeled and crushed
1/3 cup olive oil
3 tablespoon lemon juice
4 oz. small thin ruffled edged noodles
2 7-oz. cans white tuna in oil, drain and flake a bit
1 cup pitted black olives, cut in half
1 large sweet red pepper, seeded and cut in slices
¼ cup capers
1/3 cup minced fresh parsley, packed
salt & pepper to taste
Directions:
Mix garlic, olive oil, and lemon juice, and set aside. Cook noodles. Combine cooked noodles and toss with dressing, add tuna, etc. Season with a little salt, add plenty of fresh ground pepper. Put aside for a whole day and then taste before adding any more seasoning. No lettuce, please, but it looks pretty in a deep glass dish. May be made 2 days ahead.
