Original Day Family Cookbook
Ingredients:
9" unbaked pie shell
Beaten egg white
1 cup finely chopped onion
2 tablespoon oil
1 pkg. (10 oz) frozen chopped spinach
1 teaspoon salt
1/8 teaspoon nutmeg
dash pepper.
6 eggs
½ cup milk
2 cup cream-style cottage cheese
½ cup grated Parmesan cheese OR 8 oz mozzarella cheese, shredded
Directions:
Brush 9" unbaked pie shell lightly with beaten egg white. Saute chopped onion in oil until golden, about 5 mins. Drain frozen chopped spinach, thawed in colander, squeeze out excess liquid. Add salt, nutmeg, and pepper to onions. Beat and add eggs and milk. Add cottage cheese. Add cheese and spinach. Turn into prepared pie shell. Bake 375o oven 35-40 mins. (or 350o 40-45) or til knife inserted in center comes out clean.
For 10" plate use 2 pkg. spinach or 1-½ lb. fresh.
Garnish with red oinion slices, chopped ham, tomato slices, cubes of cooked beef or chicken, tuna chunks, shredded cheese.
