Original Day Family Cookbook
Ingredients:
8-inch pie baked shell
10 oz fresh spinach
2 tablespoon butter
2 tablespoon scallions
salt & pepper
nutmeg
3 large eggs
milk or cream
¼ cup grated Swiss cheese
Directions:
Stem and wash spinach and cook in large kettle of boiling salted water for 2 mins. Drain, refresh in cold water, squeeze dry and chop. Saute slowly in butter and scallions for several min. until tender. Season nicely to taste with salt & pepper and nutmeg, and cool briefly, then blend into custard.
Custard: Blend eggs with enough milk or cream to make 1-½ cups in all. Strew grated Swiss cheese in pie shell. Pour spinach mix to within 1/8" of rim. Bake in upper middle level of oven for 30-35 mins. Serves 6.
