My less rich version of Kathy's Ukrainian Poppy Seed Cake - it's really a coffee cake.

Ingredients:
½ cup (2 ounces) poppy seeds
3/4 cup milk
3/4 cup very soft butter
3 eggs
1-¼ cups sugar
1 teaspoon vanilla
2 teaspoon baking powder
2 cups sifted flour
Directions:
Combine poppy seeds and milk in large bowl. Let stand at room temperature for 3-4 hours.
Add to milk mixture: butter, eggs, sugar, vanilla, baking powder, and flour. Beat at medium speed for 1 min. Place in 8-½ x 4-½ x 2-½ inch pan or a tube pan. Bake at 350o for 1-¼ hour or until center springs back when lightly pressed with fingertip. Cool in pan on wire rack for 5 mins. Sprinkle with confectioners sugar. Serve plain or with whipped cream.
