Original Day Family Cookbook
A good buffet dish, particularly with a beef dish.
Ingredients:
½ to 1 pound of fresh mushrooms, coarsely sliced
White bread, buttered and cut into 1 inch squares

½ cup chopped onion
½ cup mayonnaise
½ cup chopped celery
½ cup chopped green pepper
Salt and pepper
2 eggs, slightly beaten
1-½ cups of milk
1 can mushroom soup, undiluted
Grated yellow cheese
Directions:
Saute mushrooms, coarsely sliced, in butter, just enough so they start to smell like mushrooms.
Put 3 three slices of buttered white bread, cut into 1 inch squares, in casserole dish. Combine mushrooms with chopped onion, mayonnaise, chopped celery, chopped green pepper, salt and pepper, and put it on the bread.
Cut 3 more slices of buttered bread the same way, and put them in next (I usually don't use this extra bread.)
Pour eggs, slightly beaten, with milk over it. Refrigerate at least one hour - more is okay, or overnight. An hour before serving, spoon a can of undiluted mushroom soup over it, and 2 more slices of bread, diced smaller. Bake at 300o for 60-70 min. or 325o for 50-60 min. About ten min. before done, sprinkle some grated yellow cheese on top.
