This makes very moist, dense corn muffins. I got the recipe at a natural foods restaurant where I once worked. - KBD
Ingredients:
2 cup corn meal
3 cup whole wheat pastry flour
½ teaspoon salt
1-¼ tablespoon baking powder
7/8 cup maple syrup
2-½ cup milk
3/4 teaspoon vanilla
3/4 cup oil
3 eggs
Directions:
Beat eggs to a light froth (5 min. or more). Slowly pour in maple syrup, then milk and vanilla. Turn on the oven to 375o and put the muffin tin in to heat them. Sift dry ingredients once and then sift (again) into the egg mixture. Use whisk to gently mix. Add oil. Spoon in muffin tins. Makes 20 muffins.
Variations:
