Ingredients:
1-½ cup soft butter
2 cup sugar
6 eggs, room temp.
3 cup sifted flour
2 teaspoon baking powder
½ teaspoon salt
½ teaspoon nutmeg
1 cup dry sherry
3/4 cup chopped pecans
Directions:
Beat butter until light and fluffy. Add sugar and cream with butter. Add eggs one at a time, beating 2 mins. each time. Sift flour, baking powder, salt, nutmeg - twice. Add sherry and dry ingredients to egg/sugar mixture alternately in thirds. Blend gently but thoroughly. Stir in nuts. Pour into greased and floured 10 inch tube or bundt pan. Bake 1 hour. Cool and frost with glaze.
Glaze:
½ cup confectioner's sugar
2 tablespoon milk
¼ teaspoon vanilla
Combine, heat to below simmering. Cool to room temperature and slowly pour over cake.
