Original Day Family Cookbook
Ingredients:
2 cups cooked rice
½ cups finely chopped green pepper, celery, and onion
1 4-½ ounce can water chestnuts, drained and sliced
1 cup mayonnaise
1 cup tomato juice
¼ teaspoon salt
1/8 teaspoon pepper
½ pound frozen shelled shrimp, cooked
1 - 7-½ ounce can Alaska King crab, drained
½ pound fresh bay scallops, cooked
¼ cup sliced almonds
1 cup shredded cheddar cheese
Directions:
Combine rice, green pepper, celery, onion, and water chestnuts and place in buttered 2 quart shallow casserole dish. Combine mayonnaise, tomato juice, salt, and pepper, and pour about half of mixture over rice. Arrange shrimp, crab, and scallops around edge of casserole, leaving center free. Pour remainder of tomato mixture over seafood. Combine almonds and cheddar cheese and arrange in center. Sprinkle with paprika. Bake at 350o covered for 25-30 min. Serves 8.
