Creamy Corn Casserole

Ingredients:

    • 2 tablespoon melted margarine

    • 1 teaspoon flour

    • 1 teaspoon powdered chicken bouillon

    • 1 teaspoon seasoned salt

    • ¼ teaspoon dry mustard

    • 2 teaspoon dried chopped chives

    • 1 teaspoon parsley flakes

    • 2 cups whole kernel corn, drained

    • 1 cup whipped low-fat cottage cheese

Directions:

Whip cottage cheese in blender for 2 mins. Blend the margarine with the flour until smooth. Add seasonings, drained canned or cooked frozen corn, and cottage cheese. Mix well and pour into a 1-½ qt. casserole. Bake 25-30 mins. at 325o Garnish with green pepper rings and pimento curls if desired.
