Original Day Family Cookbook
Good breakfast dish
Ingredients:
1 lb. broccoli
2 tablespoon flour
½ teaspoon baking powder
5 beaten eggs
1 cup cream-style cottage cheese
4 slices bacon, crisp-cooked, drained and crumbled
½ cup shredded cheddar or Swiss cheese (2 ounces)
Directions:
Cut off broccoli buds; set aside. Chop remaining stalk; cook, covered, in a small amount of boiling salted water for 5 min. Add reserved buds; cook 5 min, drain. In small mixing bowl stir together flour and baking powder; set aside. In a medium mixing bowl beat eggs. With wire whisk or rotary beater, beat in flour mixture. Stir in cottage cheese and bacon. Evenly spread broccoli in bottom of greased 10x6x2" baking dish. Pour egg mixture evenly over broccoli. Bake, uncovered, in 350o oven for 20 min. Sprinkle with cheddar or Swiss cheese. Bake 3 min. more or until center is almost set and cheese is melted. Let stand 5 min. before serving. Makes 6 servings.
