Breakfast Fruit Soup

Ingredients:

    • 3 tablespoon quick-cooking tapioca

    • 2 tablespoon sugar - dash of salt

    • 2-½ cups water

    • 1 6-oz. can frozen orange juice concentrate

    • 1 banana,sliced

    • 2 peaches, sliced

    • 1 orange, peeled and sectioned

    • ½ cup sliced strawberries

    • 1 tablespoon lemon juice

Directions:

Combine tapioca, sugar, salt and 1 cup of water; stir over medium heat til mixture comes to a rolling boil. Stir in concentrate and remaining water. Cool for 15 min. Stir, cover and chill. When soup is slightly thickened, stir in fruits and lemon juice. Serve in cups or dessert bowls.
