Original Day Family Cookbook
Ingredients:
2 tablespoon butter
½ cup chopped green onion, including tops
2 cup diced seeded cucumber (1 large)
1 cupwatercress or leaf spinach, chopped
½ cup peeled and diced potatoes (1 med.)
2 cup chicken broth
3/4 teaspoon salt
½ teaspoon WHITE pepper
1 cup light or heavy cream
Directions:
Melt butter. Add chopped green onion. Cook over medium heat 5 mins. (Don't brown.)
Add diced cukes, watercress or leaf spinach, potatoes, chicken broth, sale, and white pepper. Bring to boil. Reduce to low and cook 15 mins., vegetables tender. Cool slightly. Puree in blender, adding 1-½ cup at a time. Add light or heavy cream. Cover and chill several hours or overnight. Garnish - radish slices, chives, cuke slices, curry powder.
