Original Day Family cookbook
This comes from my old Smith friend, Anna Christensen. -KBD
Ingredients:
1 - 9" pie shell, pre-baked 10 min. (see recipe below for pie crust)
2 tablespoon butter
1 med. onion, chopped fine
1 cup mung bean sprouts
Brocolli, cooked and well-drained (1 pkg. frozen or the equivalent thereof if using fresh)
½ cup ricotta
1 cup sour cream (do NOT subsitute yogurt for this)
2 eggs
salt and fresh pepper
½ teaspoon nutmeg
½ cup parmesan cheese
Directions:
Saute onion in butter. Add sprouts and saute 5 min. Put brocolli in pie shell. Sprinkle sprouts and onion over. Beat ricotta, eggs, sour cream and seasonings. Pour into pie shell. Sprinkle parmesan cheese on top. Bake at 350o for 30 min. or until set.
