Original Day Family Cookbook
Ingredients:
2/3 cup black beans
6 cup water
A bay leaf
1 tablespoon oil
1 green pepper
1 large onion
4 - 5 cloves garlic
1 teaspoon cumin
Pinch cayenne
1 teaspoon lemon juice
1 tablespoon soy sauce
½ - small can of tomato paste
Directions:
Boil beans 2 min. and soak for 1 hr. Bring to boil with bay leaf, then reduce heat and simmer covered, noting the time. Meanwhile, heat oil in frying pan on medium-high heat. Saute onion for 2- 3 min, then add green pepper, garlic, salt, cumin and cayenne, and saute a few min. more. When beans have been simmering for 20 min. or so, add vegetables. Simmer about 20 min. longer, adding soy sauce and lemon juice toward the end.
