Ingredients:
2# fish fillets, flounder, scrod (baby cod), schrod (baby haddock)
¼ cup red wine vinegar or lemon juice
2-3 tablespoonmustard, prepared
3/4 cup oil
Salt and pepper
1-½ cup crushed cheese crackers
Directions:
2# fish fillets, flounder, scrod (baby cod), schrod (baby haddock)
Dip fish in dressing of red wine vinegar or lemon juice, mustard, and oil. May add herbs, basil, oregano, salt and pepper.
Or use a prepared Italian or blue cheese. Then dip in crushed cheese crackers. Drizzle with butter or oil. Bake in 500o degree oven 6-7 min.
Variations:
Less calorie version: Dip fish in 1 tablespoon oil in bowl and then into plain bread crumbs, maybe seasoned.
