Original Day Family Cookbook
Ingredients:
2 cups grated carrots - long thin strips
1 cup raisins
½ cup flake coconut (optional)
2 finely grated apples
½ cup crushed pineapple, drained
Mayonnaise to taste OR mix together ¼ cup mayonnaise, ¼ cup low-fat yogurt
2 tablespoon lemon juice, dash of salt
Directions:
This keeps well; after several hours the flavors blend and raisins soften.
Variations:
OR marinade carrots (covered) in the following for 24 hours: ¼ cup lemon juice; 1 tablespoon salad oil; 1 tablespoon milk; dash of salt. Then add raisins just before serving.
