Ingredients:
3 tablespoon butter or margarine
3 tablespoon olive oil
2 pounds (4-5 medium) potatoes, peeled and thinly sliced
1 pound carrots, peeled and sliced
½ pound (2 medium) onions, thinly sliced
½ teaspoon salt
Directions:
Heat oven to 400o. In large, non-stick skillet, heat half of butter and oil. Add half of potatoes, carrots, and onions, and saute until potatoes are tender-crisp--about 10 min. Place in 13x9" baking pan. Repeat to cook remaining vegetables, and place in baking pan. Sprinkle with salt. Bake vegetables 30 mins. or until crisp and golden brown.
Variations:
