Mandarin Chicken

Ingredients:

    • 4-6 chicken breasts or l frying chicken, cut-up

    • ½ cup flour

    • 1 teaspoon salt

    • ¼ teaspoon pepper

    • 1/3 cup oil

    • 1 (11-ounce) can mandarin oranges

    • 1/3 cup soy sauce

    • ¼ cup brown sugar

    • ½ teaspoon nutmeg

Directions:

In a bag, combine flour, salt and pepper. Add chicken pieces and shake to coat with flour. Pour oil into a large skillet and brown chicken. Remove chicken to a shallow casserole.

Meanwhile, drain oranges, reserving liquid. Combine soy sauce, brown sugar, nutmeg and orange liquid. Pour over chicken. Bake at 350o for 40 min, basting occasionally with pan juices. Arrange oranges over top of chicken. Bake 20 min. longer.
