Original Day Family Cookbook
Ingredients:
½ cup (l stick) butter
1-½ cups firmly packed light brown sugar
2 cups unsifted flour
2 teaspoon baking powder
½ teaspoon salt
2 eggs
2 cups finely grated carrots
½ cup chopped walnuts
Directions:
Melt butter in large saucepan. Add brown sugar; stir until blended. Remove from heat; cool slightly. Sift flour, baking powder, and salt. Beat eggs into cooled butter mixture, one at a time. Stir in flour mixture, blending well. Add carrots and walnuts, mix well.
Pour into 2 greased 8x8x2" baking pans. Bake at 350o for 30 mins. or until centers spring back when lightly touched. Cool 10 mins. in pans on wire rack. Remove from pans; cool completely.
Cream Cheese Frosting:
2 ounces softened cream cheese
1/3 cup softened butter
1 teaspoon vanilla
1-½ cups 10X sugar
Combine softened cream cheese with softened butter in a small bowl; beat until smooth. Stir in vanilla and 10X sugar until fluffy and smooth.
